Going Greener
The first half of the show will be about gardening - but this is no ordinary gardening show! Pamela Kletke, who teaches kids to garden and is involved with community gardens, will share her expertise in those areas and more. Shirley Wilkes-Johnson, a 30 year vegan organic gardener, will tell you how to harvest free food, grow your own culinary and medicinal herbs and create an edible landscape for yourself, the birds, the bees and the butterflies. These two women will inspire you even if you think you aren't interested in gardening - they will have you eager to dig in the dirt! Don't let the "powers that be" feed you GMOs, pesticides, manure, blood meal, bone meal, mad cow disease, etc. Save the planet - and yourself!
Recipes from the Garden
Pamela Kletke's Zippity Poppity Minty Strawberry Salad
Salad Baby spinach Looseleaf lettuce Strawberries, thinly sliced Almond slices, toasted Spearmint, julienned Lemon juice Avocado, sliced
Dressing Olive oil Raspberry vinegar Agave nectar Jack Daniels Old No. 7 mustard Black poppy seeds Drizzle
a bit of lemon juice over the sliced strawberries and let sit while you
put the baby spinach, looseleaf lettuce, almond slices, and julienned
spearmint into a large bowl. Gently mix in strawberries. Whisk dressing
ingredients and toss with salad. Distribute to plates and top with
avocado slices.
Shirley Wilkes-Johnson's Version of
CHIMICHURRI SAUCE
This garlicky sauce from Argentina is used like ketchup in South America. Churassco's restaurants serve it as a dipping sauce with fried plantain chips. There are many different ways to make this, so play with the ingredients. Garlic boosts the immune system and parsley is a blood purifier and a kidney tonic. You can use Chimichurri
as a basting sauce to grill with or as a condiment or on pasta.
2-4 garlic cloves, peeled
1 cup (loosely packed) fresh Italian parsley
a few sprigs of cilantro 2/3 cup olive oil
2 tablespoons Balsamic vinegar 1/2 teaspoon hot sauce, optional
1/2 teaspoon ground cumin 1/2 teaspoon salt Add garlic cloves to food processor and allow to run until garlic is chopped. Add rest of ingredients and puree. Transfer to bowl or jar.
